A Caprese salad is typically prepared using a few high-quality ingredients; fresh mozzarella, tasty tomatoes and fresh basil, seasoned only with good quality olive oil and a sprinkling of salt and pepper to taste. Vinegar is never used as it would overpower the simple flavour of the mild cheese.

Makes 4 serving


2 pounds Nature Knows tomatoes, cut in half.
1 pound fresh Mozzarella or Bocconcini cheese, cut or torn into bite-sized pieces
1/4 cup packed fresh basil washed well and spun dry. Then, torn into small pieces
1 1/2 cups Nature Knows blueberries, when in season
3 to 4 tablespoons extra-virgin olive oil
sea salt and pepper to taste


Simply arrange fresh ingredients on a pretty platter. Drizzle with oil and add salt and pepper to suit your taste.
